Ingredients (Serves 2)

  • 8 oz fettuccine or tagliatelle
  • 2 cups mixed organic mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 small shallot, finely chopped
  • 1 tablespoon olive oil
  • ½ cup raw cashews (soaked 2 hours)
  • ¾ cup unsweetened oat milk
  • 2 tablespoons nutritional yeast
  • 1 teaspoon truffle oil
  • Sea salt and cracked black pepper
  • Fresh parsley for garnish
  • Optional: vegan parmesan

Instructions

Cook pasta according to package directions.

In a pan, sauté shallots, garlic, and mushrooms in olive oil until golden.

Blend soaked cashews, oat milk, nutritional yeast, salt, and pepper until silky smooth.

Pour the sauce into the pan with mushrooms and stir gently. Add cooked pasta and toss until fully coated.

Finish with a drizzle of truffle oil, parsley, and vegan parmesan.
